Is pasta good for your health?

As long as it’s eaten in moderation, pasta makes a nutritionally balanced meal, especially if cooked with vegetables and plant-based protein.
It’s also a good idea to choose whole grain pasta most often, which provides more benefits, fiber and micronutrients than refined “white” pasta.

Essentially, when we are short on time, pasta is a no brainer and makes a quick, satisfying meal. However, when pasta is a staple and part of our daily diet, the best option would be packing your bowl of pasta with plenty of fiber and veggies like the ones listed below.

Ingredients

  • 16 oz (450 grams) spaghetti
  • ½ cup (120 ml) extra virgin olive oil
  • 5 garlic cloves, minced or sliced
  • 1 tsp crushed red pepper, or to taste
  • ¼ cup fresh parsley, chopped (optional)
  • salt, to taste
  • grated parmesan cheese, to serve (optional)

Instructions

  • Cook spaghetti in a large pot of salty boiling water until al dente.
  • While the pasta is cooking, heat the olive oil in a large pan over medium heat. Add the garlic, the crushed pepper, and cook gently for a few minutes, or until the garlic is pale gold, take care not to burn it! Stir in chopped parsley.
  • Drain the spaghetti "al dente" and reserve 1/2 cup of cooking water.
  • Add spaghetti to the pan, stir well to coat with the oil, add some starchy cooking water to ensure the pasta is moist and juicy*.
  • Cook on medium heat for 30 seconds, stirring a couple of times. Sprinkle the spaghetti with extra chopped parsley, and grated parmesan cheese if you don't keep it vegan. Serve immediately.

Notes

Cooking water: add pasta water gradually, you might not need all of it to make spaghetti nice and moist. You don’t want to water down the flavor.

    1. HI Joe. I’m not a nutritionist, but I’m happy to get my daily protein from beans, chickpeas, lentils, and cheese. And I’m perfectly fine as I run and exercise regularly, including weight lifting.
My website offers meatless recipes for vegans, vegetarians, and for those simply looking for a meatless recipe. Thanks : )
