Ingredients

8oz(220 grams)pasta (linguine, penne, etc...)
White Wine Pasta Sauce
2 tablespoonsbutter
1tablespoonall-purpose flour
2garlic cloves
½ cup(120 ml)dry white wine
½tablespoonlemon juice
½ cup(120 ml)pasta cooking water
¼ cupgrated parmesan cheese
¼teaspoonfine salt, or more to taste
⅛teaspoonground pepper
1-2tablespoonchopped parsley (optional)
Instructions
Boil a salted pot of water for the pasta and cook it al dente according to package directions.
When the pasta is 5 minutes away from being done, scoop out ½ cup of pasta water, set aside, then add the butter to a skillet over medium-high heat. Once the butter melts, sprinkle the flour in and cook for 1, stirring often.
Add in the garlic, followed by wine, pasta water, lemon juice. It looks watery at the beginning, but let it cook, bubbling, for about 4 minutes or until the sauce has thickened up to your liking.
Stir in the parmesan cheese (this is when you can add also your add-ins if you wish, see notes in the recipe card). Take the skillet off the heat, taste and season with salt & pepper as needed.
Drain the pasta, add it to the skillet and toss until coated and moist. Toss in some chopped parsley if desired. Serve immediately.
Notes
White wine pasta variations: you're welcome to add your favourite add-ins at the end of the cooking time. They need to be previously cooked when you add them to the white wine sauce, and make sure they get warm enough once coated in the sauce and before adding the drained pasta (you don't want hot pasta mixed with cold ingredients : ).Cooking with alcohol – the cooking time here is quite short and not enough to allow the alcohol to evaporate. I consider this not a kid-friendly meal, so please trust your judgement when deciding whether to serve this to children.
