Ingredients
1tablespoonolive oil or extra virgin olive oil
1medium-sized onion, peeled and sliced
2garlic cloves, finely sliced
1 pinchsalt & pepper
2 cans(28oz in total)canned whole or diced tomatoes
1 cup(240 ml)vegetable broth or water
¼tsp fine salt, plus more to taste
freshly ground pepper, to taste
1 handfulbasil leaves (optional)
Instructions
Heat the olive oil in a large pot or Dutch oven, add the onion, a pinch of salt, and cracked black pepper, then sauté over medium heat until the onion is soft and sweet (translucent and not too brown). It takes 5 minutes.
Add the garlic, and cook for a further 1 or 2 minutes. I also add about 1/8 teaspoon of cayenne pepper at this point, but it's optional.
Add the tomatoes, broth, and salt, and bring to a boil; then reduce the heat to medium-low and bring to a simmer. Cover with a lid and cook for 10 minutes.
Turn the heat off, let it cool for a few minutes, taste and adjust the seasoning to your liking. You might want to add a pinch of sugar at this point to balance the acidity of the tomatoes, that varies from brand to brand.
Add a handful of basil leaves and blend until smooth with an immersion blender, or, when the soup is a bit cooler, transfer it to a blender. Be careful; the steam is still hot!
Divide the soup into bowls, add freshly cracked pepper and a drizzle of olive oil, and serve with crusty bread or croutons. Enjoy!
