Mozzarella in carrozza "Fried mozzarella sandwiches"
Fried mozzarella in carrozza is one of those classic Italian appetizers that everyone absolutely loves. It's essentially a fried mozzarella sandwich, crisp on the outside and melted on the inside.

Ingredients
1(4.4oz/125 grams)fresh mozzarella ball
6slices of bread, crust removed
½ cup(60 grams)flour
2eggs
1 cupbreadcrumbs
salt & pepper
Canola oil or another neutral flavor oil for frying
Instructions
Prepare 3 bowls large enough to hold each sandwich.
Place the flour in the first bowl, the whisked eggs in the second bowl, and the breadcrumbs in the third bowl. Set aside.
Cut the mozzarella into 6 slices and drain. Spread the slices on paper towels and press to squeeze excess moisture.
Remove the crust from the slices of bread, cut each slice into halves in order to have 12 triangles.
Place one mozzarella slice on 6 of the bread triangles, season with salt and pepper.
Top with the remaining slices and press the sandwich edges so that they stick together well to prevent the mozzarella from leaking once it's in the pan.
Dredge the sandwich triangles in the flour first, shaking off any excess.
Next, dip the sandwiches in the egg, making sure that each side is evenly coated and soaks up some of the egg.
Finally, press the sandwich gently into the breadcrumbs. The sandwiches should be completely sealed with breadcrumbs on all sides. If necessary, dip any open edges in the egg mixture again, and press into the remaining bread crumbs to ensure the mozzarella doesn’t leak out as it fries in the oil.
Heat approximately 3-inches of oil over medium heat (your pan should be large enough to fry 2 triangles at a time). To check if your oil is nice and hot, drop a small piece of crust into the oil, if it sizzles and floats it's ready.
Fry each triangle until crisp and golden brown. After the sandwich is golden on both sides, transfer to a paper towel lined plate to allow some of the oil to drain for a few minutes before serving. Season with a sprinkle of salt if desired and enjoy while they're still nice and warm!
